An easy to make pineapple salsa that will give a fresh, sharp flavour to complement your favourite Mexican dishes.
I know that sweet, tart and spicy savoury dishes are not for everyone. However, I love the addition of something sweet and something pickled to a main dish to give it a lift in flavour. And while Mexican dishes, think nachos, enchiladas, tacos or burritos, are generally packed with flavour, they shine with the sharp flavour of a freshly made salsa. Enter, pineapple salsa.
Pineapple salsa is easy to whip up in a few minutes. You can use fresh pineapple or canned if that’s all you have. Simply cut it up finely. It’s important to cut all the ingredients finely to allow the flavours to infuse and so that you get a little of everything in each bite.
Pineapple Salsa
Ingredients
- 1 cup pineapple finely chopped (fresh or tinned)
- ¼ red onion finely chopped
- ¼ cup pickled jalapeños finely chopped
- ¼ cup coriander finely chopped (or parsley)
- 1 lime juice of
Instructions
- Combine all ingredients in a small mixing bowl.
Pre-make a batch of salsa
It is possible to make up a batch of this pineapple salsa and store it in the fridge for up to one week in an airtight container. Thus, you can prepare it and have it ready to zest up any dishes you’re eating throughout the week, such as a grain bowl—yummo!
