Pumpkin Peanut Butter Cookies


1 cup mashed pumpkin, pre-cooked 1 cup peanut butter

1 cup rolled oats 1 tablespoon honey or maple syrup 1 teaspoon vanilla extract or essence ¼ cup dark chocolate chips (or equivalent chopped dates)


Preheat oven to 180oC.

Combine all ingredients, except chocolate chips, in a mixing bowl. Once fully combined add chocolate chips or dates and stir through. Place spoonfuls onto a baking tray lined with baking paper. You may roll into balls and flatten if the mixture is slightly dry.

Bake for 12-15 minutes until golden brown. Cool on tray. Serve or store in an airtight container.
